happy holidays! our first giveaway.

for the record: i should be writing my final paper, but i was too excited to keep this a secret!

tis the season of giving right? and we love giving. so tada – our first giveaway! this makes us a legit blog right?

it’s of no surprise that we are really loving the sugar & spice market gluten free products. we’ve made gluten free biscuits, waffles, brownies, cookies, and used the AP flour in tons of savory dishes. so for this holiday season, we’ve paired up with them to bring one lucky reader a bag of their gluten free sugar cookie mix. yum yum yum. this is their featured special this month, which is perfect because you could use them in your cookie swaps or heck, i bet santa is gluten free these days, so he’ll definitely appreciate some gluten free cookies.

now what kind of giveaway would it be without an unrefined recipe? amiright?



gluten free chewy chocolate chip cookies

3/4 c. unsalted butter, softened
1 egg
2 tsp. vanilla extract
1 bag of sugar cookie mix
1 tsp cornstarch
a pinch of salt
1 c. bittersweet chocolate chips

Preheat oven to 350 degrees F.

step 1.  in the bowl of a stand mixer fitted with a paddle attachment, cream butter until fluffy. add egg and vanilla and blend in.

step 2.  mix in cookie mix and salt. stir in chocolate chunks.

step 3.  scoop dough and drop  onto a prepared baking sheet.  bake for 8-10 minutes, until barely golden brown around the edges.
baker’s note: in an effort to use healthier oils, butter is healthy y’all! kidding. we prepare our baking dishes with coconut oil. it’s a great staple for any kitchen.

step 4.  let cool and when ready dive in! but, try not to eat them all.
